In Denmark we can harvest cucumber from March-October. It is a plant that needs a lot of heat and sun, which is why the Danish ones are primarily cultivated it in greenhouses. Even though we call the cucumber a vegetable, botanically speaking it is a berry with many seeds.

At RADIO we like to use the cucumber raw, but we also pickle either small cucumbers or slices, which we use in a dish later to add some more acid. The cucumber primarily consists of water and that is why we also use the cucumber to dilute our juices. It gives more taste to the juice than pure water.

The cucumber came to Denmark during the 17th century from the South of Europe, yet the plant has been cultivated in Asia for more than 3.000 years. Due to our cold climate it was not until the 19th century with its greenhouses the cultivation of cucumber really started in Denmark.
