The season for Jerusalem artichokes in Denmark is form August – April. At RADIO we use he tuberous root in great many ways. For example, raw in thin slices to give a crispy texture. Uncooked the Jerusalem artichoke has a sweet nutty flavor. We also serve it baked, boiled or pureed, where the heat has given it a mild taste and creamy texture.
When the Jerusalem artichoke is in season we also pickle them. That way we can add the nutty root in winter as well.
