From a botanical point of view, the rhubarb is a vegetable, but we overlook that at RADIO. As most others in Denmark we mainly use it like a fruit in marmalades, compote and sweet pies. At RADIO we like to use the rhubarb because of its acid to contract either sweet or fat elements on the plate. That is why we also use the Rhubarb in savory dishes.

The acid in the rhubarb comes from a high level of apple- and oxalic acid, which you also find in spinach.

You can harvest the earliest rhubarb from late March to August. It needs cold weather to bloom, which is why the Nordic environment is perfect for the plant.
