Big, juice corncobs with a thick layer of cold butter and some salt. Wow, that’s the flavor of the late summer in Denmark. And though the space between your teeth afterwards are filled with corn, a corncob is with every struggle. From the end of June to the beginning of October we can enjoy fresh, yellow corn at RADIO which we both grill and boil for the sweet flavor to really stand out.
The corn originates from South America, where the Spaniards brought the cob to Europe in the 15th century to feed the animals. However, we fell for it as well, and now we produce much more corn than any other cereal globally speaking. Actually, we cultivate more than 600 million tons of corn every year. We do not use quite as much at RADIO, but when in season we like the yellow touch on our plates.
