June brings strawberries, asparagus, and new potatoes.

From next week, summer is officially upon us, and we are looking forward to the next few months when the taste of Denmark is truly incomparable. In recent weeks, we have eagerly indulged in the first Danish asparagus, which has finally made its entrance - and also on RADIO's menu. Here, we serve grilled white asparagus from Søren Wiuff, accompanied by a frothy cheese sauce made with Unika's new 'Efterglød' and new Danish potatoes. We also have the white asparagus in the main course, where we serve grilled mackerel with juicy matchsticks of white asparagus marinated in roasted nori oil.

The first Danish strawberries have also arrived, and we enhance their flavor with a hint of Sichuan pepper and a rich strawberry ice cream, where the cream has been infused with geranium, providing a fantastic perfume to the dish.

Emil Advances in the Competition to Become Sous Chef of the Year

This year, The Danish Restaurant Guide has nominated our sous chef, Emil Maimann, for the title of 'Sous Chef of the Year 2023', and in early May, he competed against the six other nominated sous chefs at Bjørnekælderen. Emil managed to impress the judges with his dish, and he has now advanced as one of the three final nominees for the title, which will be awarded at the Restaurant Guide's gala in October. Here with us, Emil is already the 'Sous Chef of the Year' every year, but we would greatly appreciate it becoming an official fact. Furthermore, we still have a few vacant spots on our trophy shelf in the kitchen, so we hope that we can soon adorn it with a well-deserved trophy for Emil.
